The pure natural coffee beans, carefully selected and pre-treated on the day they are picked, go through a range of processes to transform them into deliciously flavoursome soluble coffee: rinsing, roasting to achieve the desired flavour (ranging from mild to espresso), grinding the freshly-roasted beans and extracting the freshly-ground coffee. There are various ways to dry the freshly-filtered liquid coffee con- centrate:
SPRAY DRYING which generates a fine powder by drying the coffee in a jet of hot air; AGGLOMERATION which binds the coffee particles into granules; FREEZE DRYING which first ‘shock’ freezes the freshly-ground coffee concentrate which is then broken up to form small grainy particles and dried gently in a vacuum.
